Sun dried tomato cream chicken pasta.

So like I promised here is the recipe for the Sun dried tomato pasta that I made the other night for my boyfriend and our little girl. Of course I can't take credit for the recipe since I didnt  come up with it but I do have one recipe that I was handed down from my fathers side of the family and one from boyfriends family that we really like.

Serves: 2-3 people
Prep time: 20 minutes
Cook time: Chicken-10 minutes
Cook time: Sauce-10 minutes
Cook time: Spaghettie-10 minutes


Ingredients
6 Boneless, skinless chicken tenders, thawed
2 tablespoons extra virgin olive oil
fresh ground pepper, to taste
1 1/2 tablespoon butter
2 tablespoons flour
1/2 cup onions, finely chopped
2 cloves garlic, minced
1/2 challot, minced
1/4 cup sun dried tomatoes(In package, not oil packed)
1/4 cup fresh basil, chopped
1 1/2 cups reduced sodium chicken broth
1/2 cup regular cream
1/4 16 ounce package spaghetti, uncooked.

Directions:
   1.Heat olive oil in a large pan over medium-high hear. Add chicken and gr
ind fresh pepper on each side. Cover and cook until done, about 5 minutes on each side. (When done, chicken will have NO pink on the inside) Remove from heat and set aside, keep covered.
   2. In a large skillet melt butter over medium heat. Add onion, garlic, and shallots, cooking 1-2 minutes just until soft. Add sun dried tomatoes and stir. With a whisk in hand add flour and stir. slowly pour in chicken broth, whisking constantly to remove lumps. Add cream, still whisking, and keep going for about 3-4 minutes or until the sauce begins to thicken. You may have to let it set for a few min to chicken up, our wouldn't thicken until I let it set for a few minutes and stirred it continually.
  3. Take sauce off heat and let it sit it will continue to thicken stir n feel free to stir every so often as you cook the noodles.
  4. Cook spaghettie according to the directions, its done when it is soft but still has a bit of al dente please.
  5. Add fresh basil to sundried tomato sauce and give it a good stir.

Hectic week.

This past week was a crazy week with the fourth of July and spending the week at lady bug's daddy's house.  I then forgot my computer so I wasn't able to blog the new recipes that I tried this week, but today I will blog them.

So this past week my daughters father wanted us to stay over so that I could take her to the pool and so that  we could spend some time together and be closer and so on. Turns out that I got sick every night and felt terrible the next morning, but I had to get up and press on for lady bug and play with her and take her to the pool. She had such a fun time in the pool and playing outside, and we even showed her blues clues which totally had her mesmerized. So did the show Psych, which is my show. Now that were home, I feel a little better but still feeling nausea, which must have something to do with Aunt flow coming for a visit.

Anyways, I cooked a Sundried tomato cream sauce chicken pasta. Chris said that it was amazing and that it was like a gourmet dinner. That made me feel so good and it was a very good dinner, then we took her to the pool, more so I did because he was working, and she had a good time other than the fact that she didnt really want to sit in her baby boat, she wanted to held the whole time and climb on the wall.

The fourth of July was really fun except for the fact that we only spent 20 minutes at the pool because their were too many boys and adult men jumping around and rough housing to actually have fun and enjoy time at the pool. I mean how hard is it to teach your children to have manners and make sure that they watch where their throwing toys and jumping into the pool. We almost got jumped on and kicked in the face several times and after the fourth time or so I figured that it was time to head home and watch some blues clues with my little lady bug. I just hate that people let their kids run wild at the pool while they stand around talking and drinking beer, I mean really?? Your going to drink a beer at the pool? I mean what happens if your kid starts drowning and why would you not teach your kids to be careful of babies and other people in the pool and give them some space. Just frustrating  we couldn't spend more than 20 min at the pool.

Later on we made hamburger's and hot dogs with mac and cheese with cheese fries and fun toppings, and then we had Ben and Jerry's ice cream for dessert. Then we did fireworks and watched the fireworks show from Brooklyn or Chicago on tv. We had left over fireworks from last year that we didnt use so we figured that we would use them this year, who knew that fireworks can go bad and not light up right. Our sparklers didn't work at all and I just ended up lighting about maybe 4 and left all the rest unlit because they were useless.

The rest of the week was pretty un-eventful. I had a Dr appointment on Thursday and then we went swimming some more and watched more psyche and had pizza for dinner on Saturday from papa johns, it was good but I still prefer domino's because of their garlic crust and their bread bowl. Men's shirt to women's fitted t-shirt

So today I decided to take my boyfriends shirt that he has refused to wear and turn it into a fitted womens t. It ally worked out very well. I got it off pinterest and decided to give it a try, (yes a lot of my crafts and projects and recipes come off pinterest, sorry).

 I got the idea from  http://connectthedotsons.blogspot.com/2011/03/diy-husbands-large-t-shirt-to-fitted.html. and decided that I just had to try it and see if it works. Plus I needed to wash it because it got dirty from lady bug always pulling on me so well see how it looks after the wash.

All you need is a large or xlarge tshirt and a pair of scissors. I got it out of the dryer and it held up well, I could probably stand to tighten a few knots here and their but other than that its pretty nice!!!

So you start with a regular t-shirt, this one is purple with white flecks,
I turned it inside out  because its much easier. 
Then you cut off the bottom, about an inch, and then and inch off each side.
I stayed close to the seems because my shirt wasn't too large 
and I didnt want it to be too tight. 


Then you just frayed the sides. cut the sides into strips. 


Then I knotted each set of cut twice


Then I turned it inside out and put it on.


Yes their are a few small holes but thats to be expected. 

Other that I say that it turned out fairly well.

The movie Magic Mike

So who is going to see magic mike? Anyone??

I want to go see the movie and will be sometime this month with some friends, just so we can swoon and drool over the men's bodies and talk about how hot they are and so on. But thats about it, its nothing more than a movie to me. I am so lucky to have my own magic mike at home and trust me I'm the one doing the stripping for my baby. But I wouldn't mind it if he did. Point being is that its just a movie, I dont think of it as anything more than that. All I have heard for the past few days, maybe a week is about how this movie is inappropriate and how its so sinful and how women shouldnt go see this movie because they have their own magic mikes at home and on and on and on.

I think what some women are missing is that its just a movie and doesnt take anything away from their boyfriends, fiances, and husbands. They love their husbands and nothing could change that, certainly not some movie. I mean no real mother or wife is going to get the chance to actually see these men strip in real life or be intimate with them. I mean come on, give us working mothers and wives a break, its just a fun movie to go see with your girlfriends!!

I personally cant wait to see these boys half naked!!!

Garlic brown sugar backed chicken.

So as I mentioned in a post yesterday I made some backed chicken from a recipe that I got off pinterest last night. We had pepperoni bread for lunch that I also got off the site and I'll put up that one later.

I got the recipe from Food.com and this is what its supposed to look like.

The ingredients are:


  • 4 boneless chicken breasts
  • 4 garlic cloves, minced
  • tablespoons brown sugar
  • teaspoons olive oil


  • Directions: 



    1. Preheat oven to 500 F then lightly grease a casserole dish. 


    2. In a small saute pan, saute garlic with the oil until tender. 

    3. Remove from heat and stir in a brown sugar. 


    4. Place chicken breasts in a prepared baking dish and covered with the garlic and brown sugar mixture. 

    5. Add salt and pepper to taste. 

    6. Bake for 15 to 30 minutes. 


    Makes 4 servings. 


    It was not as great as I thought that it would be because we didnt have the minced garlic, but Im sure that if we had that it would have tasted better, But it was good and sweet and went great with rice and stir fry veggies. 

    I cut up the chicken so that it would be easier for my little girl to east.

    Moving

    So as I mentioned in my introduction my little lady bug and I are moving in with her father. My parents are so thrilled but his parents couldn't be more mad. Sure were not married....yet...but why do people have to get so upset about things like that?? Our little girl only gets to see her father twice a week and thats it, and if she is still up when he leaves then she has a complete melt down. I sometimes have to pry her little hands off the screen door or pull her up off the floor and cuddle her because she wants to be with her father. We both want to live together for her sanity and I'm glad that we only have one more month.

    His mom and I have never really gotten along because they never really approved of our relationship because he was so much older and we both had personal problems. She was even more disproving when they found out that we were going to have a little baby. But I have been trying to be respectful and appreciative, nice, loving, caring and so on to her for the past 4 1/2 years. But she doesn't reciprocate a whole lot.  I just wish his mother could accept that we are a family and that we love one another.

    The only reason that we have not gotten married is because were both in school, or I was then took a break. But he is and is working on his masters.....I am so deeply proud of that man...but once were done with school and have the money (My parents wont pay for it) well get married. I do love both of our families to the bottom of my heart, I just with people didnt always have to be so critical and judgmental. I mean this is the 21st century its quite common for people to live together and not be married. It is right??

    Anyways. We are moving to Pembroke August first to a little student housing that has 2 bedrooms and 2 baths. Not sure if it will have a back yard or a front yard but we do have a large gate that we can use so she can play outside. Their is a park nearby and a little shopping center and I think a pool as well. I am so happy right now and have been packing and getting everything in order for the big move for the last month.

    Everything is finally moving forward and well finally be a family!!! Well off to make dinner, going to try a new recipe from pinterest!!

    Introduction

    So this is my first time starting a blog to share things from my personal life, share recipies and projects and to just make some friends along the way. It has been frustrating to be honest when I had to think of a URL, because they would tell you that all the good ones are taken but they cant all be taken can they?? Really?

    Anyways let me introduce myself and tell you a little bit about myself. My name is Amanda and I currently live in Greensboro but will soon be moving to Pembroke!! I am very excited to be moving and could not be happier. I have a 1 1/2 year old little girl and am somewhat dating her father. I guess you could say that we are dating but honestly I have no clue. Thats a topic for another day when I need to rant and rave. Anyways he got accepted to Pembroke university and is working on getting his masters in Addiction Therapy and asked us to move in with him. We said yes right away. Its a good thing because our little monkey of a lady bug screams and cries every time he leaves, she loves her daddy so much and is certainly a daddy's girl.

    I am a stay at home mom so I dont currently work but hey taking care of a 1 1/2 year old and running the house is a full time job. But I love doing it. Feel free to ask me anything if you want to know more.
